Abstract

The invention relates to a mustard instant soft-shell shrimp and a preparation method thereof. The mustard instant soft-shell shrimp comprises the following raw materials in parts by weight: 100-120 parts of soft-shell shrimp, 1.5-2 parts of mustard, 8-10 parts of glucose, 1-1.5 parts of aginomoto, 2-3 parts of scallion oil and 1.2-1.5 parts of table salt. The processing technology is simple, energy-saving and environmentally friendly, has good effects, retains amino acid maximally, and prevents nutritional substances and flavor substances from being lost, so that the mustard instant soft-shell shrimp becomes the high-additional-value food, such as, the travel and leisure food, supermarkets food, which is rich in nutrition, is relatively high in water content, is soft in texture, is good in flavor, and is convenient to eat and carry.
本发明涉及一种芥末即食软壳虾及其制备方法,其原料按重量份比包括:软壳虾100-120份,芥末1.5~2份,葡萄糖8~10份,味精1~1.5份,葱油2~3份,食用盐1.2~1.5份。该加工工艺简单,节能环保,效果好,最大限度的保留氨基酸、避免营养物质和风味物质损失,使其成为营养丰富、水分含量较高、质地柔软、风味好、食用和携带方便的旅游休闲食品以及超市食品等高附加值产品。
